Craft-pint care: no more freezer burn or ice crystals

Good ice cream deserves better than a frosty, crunchy top layer. Most texture problems come down to temperature swings, and they're easy to avoid.
Store it in the right place
Keep pints at the back of the main freezer compartment, not in the door. The door warms up every time it opens. The U.S. FDA recommends a freezer temperature of 0°F (â18°C).
Stop ice crystals before they start
- Press a piece of parchment or plastic wrap directly onto the surface before replacing the lid.
- Get the pint back in the freezer quickly. Don't leave it on the counter for the whole meal.
- Smaller containers mean less air. Decant half-eaten tubs into reusable 16 oz pint containers.
Tempering, the right way
Very cold ice cream is hard to scoop and mutes flavor. Move the pint to the fridge for 5â10 minutes before serving rather than leaving it on the counter, where the edges melt and the middle stays frozen.
Can you refreeze melted ice cream?
If it has only softened slightly and stayed cold, it's fine to put back. If it has fully melted or been out of the fridge for a long time, throw it away. Refrozen melted ice cream also turns icy and grainy.
